In Mario Kart Wii, tricks can be done when flicking the Wii Wheel or Wii Remote up when going off a ramp or something that will launch the racer into the air. It also can be done by pressing the top arrow button on the Nintendo GameCube controller.
In Mario Kart 7 and Mario Kart 8, tricks can be done when pressing the R button when going off a ramp or something that will launch the racer into the air.
