The course begins inside an icebox, where Shy Guys, Toads and Yoshis can be seen enjoying some ice cream while sitting down. When players exit the icebox, a glider ramp leads outside, towards a large ice cream cone with a hole carved in it. On either side is a series of varying popsicles with advertisements on them. Koopa Paratroopas are visible in the distance. You may either glide through or around the ice cream cone. Inside the ice cream cone is a pair of Item Boxes. Shortly, racers will land on a helicopter pad where nine Item Boxes are rotating around. There are then two smaller ice cream cones with a rainbow arch which you will pass under, followed by stairs leading downwards with a railing that acts as a spin boost. Upon reaching the end of the staircase, a few stores line the track, before two more staircases with similar railings lead upwards. After the second of these staircases, racers will be driving nearly vertically across a series of metal containers holding ice cream that the racers will drive on. The track then splits in two ways around an ice cream cone with several scoops of ice cream on it. After reaching the end of this part, racers will fall onto a pair of metal platforms before driving onto some platforms made of ice cream cones. These are then followed by a series of see-through platforms with item boxes available underneath, before the two paths join up again and racers are once again driving over ice cream. After jumping off of one tub of ice cream, a line of six item boxes, including two double item boxes ae readily available to any racer. Following this, a long turn is displayed ahead, made up entirely of ice cream, with a helicopter above made to look like an ice cream cone. The turn goes around a massive glass bowl of Ice Cream. After drifting around the turn (and perhaps trying for a sneaky corner cut), racers proceed to drive on a series of four ice cube trays, which form a series of ramps before leading into the icebox to start the second lap.

- Sky-High Sundae was the first track in the Booster Course Pass to be considered "new", having not appeared in any other games beforehand.
- However, the track was added to Mario Kart Tour just a few days later in the game's next tour.
- It is also the first track in the Booster Course Pass with an anti-gravity section.
