Special Item[]
Every character in the game has one special item that can only be obtainable on certain characters. As for Gold Mario, his is called Coin Vacuum, which is used nowhere else in the game except Coin Rush. When hacking the character to be playable in the normal game, the item can only be used on favorite courses and will act similar to when attracting coins in Coin Rush but with a smaller radius. Additionally, the only time Gold Mario has been seen using a special item was during the Coin Rush course set in N64 Frappe Snowland that was featured in the Valentine's Tour, where he could activate Frenzy mode with the Coin Box special item.

These badges represent the Team Rallies of their respective character if they lost or won the challenge. Some were even duplicated and used instead of these unused ones for some reason (even though a couple have won a Team Rally)

There are several unknown items can be found within the game's files. Judging by their filenames, these were most likely going to be power-ups and function in giving the player one free item of use per race.

An unused video of an animated character artwork of Toadette was left in the game's files after the release of v2.4.0. It's unknown if it was used for testing purposes or the character artworks were supposed to be animated at some point in development.

All characters that were featured in Mario Kart 8 Deluxe have their voice clips when losing a race present in the game's files. They go unused since no characters have any reactions to finishing a race in 5th place and under, unlike past modern Mario Kart entries.

Shown on one of the news section banners in the 2020 Halloween Tour, Ghost Valley 2 from Super Mario Kart was planned to appear. However, it has yet to make an appearance in this game.
SNES Ghost Valley 3[]
Lighting maps of Ghost Valley 3 from Super Mario Kart were found in the Wario vs. Waluigi Tour, which were then later removed in the following tour.
GBA Yoshi Desert[]
Objects used in a course (referred to as "Agbyd") can been found within the game's files ("PillarAgbyd" and "PillarAgbydBase"). "Agb" refers to the internal course prefix indicating that the track comes from Mario Kart: Super Circuit, while "yd" refers to the course's internal acronym, with the only course from that game with those initials being Yoshi Desert.
GBA Bowser's Castle 3 / GBA Bowser's Castle 4[]
An object used in a course (referred to as "Agbbc") can been found within the game's files (specifically "PotalPropellerAgbbc")."Agb" refers to the internal course prefix indicates that the track comes from Mario Kart: Super Circuit, while "bc" refers to the course's internal acronym, with the only courses from that game with those initials being the four Bowser Castle courses. Although two of of them are in the actual game, neither track use this object.
GCN DK Mountain[]
Objects used in a course (referred to as "Gcdm") can been found within the game's files (RoadMovingGcdm) with "Gc" referring to the internal course prefix that indicates that the track comes from Mario Kart: Double Dash!!, while "dm" refers to the course's internal acronym, with the only course from that game with those initials being DK Mountain.
DS Shroom Ridge[]
Course icons for Shroom Ridge from Mario Kart DS can be found within the game's files and were even shown in Booster Course Pass reveal trailer for Mario Kart 8 Deluxe.
Wii Dry Dry Ruins[]
Objects used in a course(referred as "Wiiddr") can been found within the game's files ("PillarWiiddr", "PillarWiiddrBase" and "SandHillWiiddr"), with "Wii" referring to the internal course prefix that indicates that the track comes from Mario Kart Wii, while "ddr" refers to the course's internal acronym, with the only course from that game with those initials being Dry Dry Ruins.
Unknown New Courses[]
Suffixes of objects used in unknown new courses can be found in the game's memory ("Mobyi", "Mobat", "Mobmd", "Mobmu", "Mobnu" and "Mobor"). "Mob" refers to the internal course prefix indicating that the track comes from this game, while the rest refer to the course's internal acronym. Additionally (in a leaked key art for Mario Kart 8 Deluxe 's Booster Course Pass) there's an icon for a course with ice cream-like structures which most likely comes from this game.
Unused City Course Layouts[]
All city themed courses have four layouts made for them and are released periodically. Below is a list of the unreleased layouts for the following tracks.

Unused Event Token Obtaining Methods[]
Upon the release of v2.10.0, Nintendo announced in the in-game news that new ways of obtaining Event Tokens were going to be added in upcoming tours by taking out other drivers, performing drifts, and keeping combo bonuses. As of this time, the "keeping combo" method is the only one that hasn't been used.
Unused Kart Setting[]
The karts have an unused setting that makes them stop and move around freely, which presumably would be used in a Battle Mode of sorts. Even though a Battle Mode is not present in the final game, there is no way for the player to stop as their character drives automatically.
Unused In-Game Items and Features[]
Feather[]
The Feather item from Super Mario Kart and Mario Kart 8 Deluxe can be found in the game's code. Although the slot contains a Banana model as it's placeholder, it's functionally still works in the game and will allow the player to perform a high jump upon use.
Mirror Mode[]
Mirror Mode is a tradition factor in the Mario Kart series. This feature is also found in the game's files, but was scrapped possibly in favor the Reverse tracks.
Boo Driver Effect[]
An unused functionality that makes drivers translucent, similar to how they become upon using the Boo item in past Mario Kart games, can be found in the game's data.
Oddities[]
Duplicate Character Emblems[]
The variants of drivers that use the emblem of the driver they're based on are actually using a duplicate of the base character's emblem.
Duplicate Badges[]
The badge for winning in Team Mario from the Mario vs. Luigi Tour was duplicated in the game's files for the Mario vs. Peach Tour and treated as two different badges in-game, with the second copy being unused since Team Mario only won the former of those two Rallies.
The same happens for the badge for winning in Team Peach on the Peach vs. Daisy Tour, the Mario vs. Peach Tour and the Peach vs. Bowser Tour, only that the former two badges are used since Team Peach won both of those Rallies, and the latter was unreleased since Team Peach lost that Rally.
The same happens for the badge for losing in Team Peach on the Mario vs. Peach Tour and the Peach vs. Bowser Tour, only that the former badge went unreleased since Team Peach won that Rally. Lastly, the same happens for the badge for losing in Team Bowser on the Bowser vs. DK Tour and the Peach vs. Bowser Tour, only that both badges are unused since Team Bowser won both of those Rallies.
